Sunday sweetness: orange marmalade with orange pulp
vote now
As I was testing a recipe that required quite a bit of freshly squeezed orange juice that I extracted with the juicer, I ended up with a nice amount of orange pulp and did not want to throw it out. So I started to think what I could do with it all. Here is my first experiment. It came out tangy, sour yet a tad sweet too. Very nice on a toast for breakfast.
INGREDIENTS4 cups of orange pulp
5 cups of water
2 cups of sugar
1 cup of thinly cut orange peel
thinly cut peel from one lemon
DIRECTIONSIn a pot add the water, pulp and sugar and simmer for about one hour
Strain all of the pulp and squeeze so to remove all of the orange water and some of the pulp and set it aside and use it for something else (I am going to try to make Orange Chutney)
Bring the water from the orange pulp to boil and add the orange peel
Add 2 cup of cold water and 2 cup of sugar
Simmer for another hour
Remove from heat, fill in warm sterilized mason jars, let it cool off at room temperature then seal them
Store in cool dark place
