*Whiskey Chicken
With a variety of Irish meals now under my belt for the week this is the next on the list. Its been on my to do list for months as a "restaurant remix" for TGI fridays, Jack Daniels Chicken. This was shockingly close if not spot on, dare I say better?. In the spirit of Irish-ness I opted for Jameson Irish Whiskey instead of Jack Daniels but if your not a drinker and have neither on hand you can buy a mini Nip at the liquor store. (any bourbon or whiskey will work fine) As I said, I've had plans to do this but I would have never guessed I'd have the opportunity to do it on the grill! This was the first use of the grill for the year, (I've been known to grill in the snow but this year I just didn't have it in me, there was just too much snow!) Its quite exciting really, I do love my grill and I use it fairly often typically up until Christmas. With mounds of snow still slowly melting my flowers are blooming and its official that spring is near! The chicken was prepared on the grill, seasoned slightly and glazed for the last 5-10 minutes with grilled pineapple, this was so incredibly fabulous. Every time I go to TGI fridays no matter what I order I ask for their glaze, I'm so glad to have my own version of it at home (since the nearest restaurant is about an hours drive) For the side I served a grilled leek and potato salad that was tossed in a light vinaigrette. It was really a great way to start off the new season. I hope everyone enjoys their St. Patrick's day! Happy Spring! Cat Whiskey Glaze: 1 ounce of roasted garlic 2/3 cup water (plus more to thin out if necessary) 1 cup pineapple juice 1/4 cup teriyaki sauce 1 tablespoon soy sauce (I use reduced sodium typically) 1 1/4 cup dark brown sugar Juice from one medium sized lemon 1/2 teaspoon onion powder 2 tablespoons whiskey 1/4 cup crushed pineapple 1/4 teaspoon cayenne pepper Place all ingredients in a pan and stir to combine. Simmer over medium heat about 20 minutes until thickened stirring frequently. Make sure you don't allow the sugar to settle and burn. Once its your desired thickness remove from heat. You can use it immediately or put it in the refrigerator for use later in the week. I found that this glaze does pretty much solidify when its chilled so when you warm it stir it frequently and add a little water if necessary to thin it back out. You can use this on burgers, steaks, chicken, pork, shrimp or dirty gym socks... it would probably still be fabulous! Grilled Leek & Potato Salad: 1 pound of boiled potatoes, 1 leek, 1 green onion both grilled, + Your favorite vinaigrette. related searches : Whiskey
