2 tablespoons lemon juice
1/3 cup sugar
2 tablespoons dark brown sugar
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice

200 gr marzipan (almond paste)
500 gr frozen puff pastry


peel, quarter, and core pears, apples, and quince. you can leave the apples unpeeled if you prefer. in a large mixing bowl, combine the fruits, lemon juice, spices and sugars, and toss to coat. arrange the fruit mixture, along with any juices, in a large oven-proof skillet and roast in a preheated oven at 200°C (400°F), stirring once or twice, until glazed and caramelized, about 25-30 minutes. let cool at room temperature.

meanwhile, thaw the frozen puff pastry.butter a 28 cm round oven-proof pan. roll out the dough on a lightly floured work surface slightly bigger than the pan. carefully fit into the tart pan, letting the excess dough hang over the edge. roll out the almond paste into a round and place in the bottom of the pastry shell. lay out the cooled roasted fruit over the almond paste and fold the edges of the pastry over the filling, pleating the dough as necessary. bake at 190°C (375°F) until pastry is golden brown, about 30 minutes.

for the roasted quince:
2 quince
juice of half a lemon
3 tablespoons sugar
2 tablespoons dark brown sugar
ground cinnamon and cloves
3/4 - 1 cup water

peel, core and cut the quince in chunks. combine with the other ingredients and bake at 200°C for 1 hour, or until the quince become soft.
