21-day Vegan Challenge (Day 7) - Chinese Stir-Fried Veggie Duck
This is a super simple tasty juicy stir-fry that I make all the time. In China this dish is often referred to as ?? su ya - Vegetarian (or Mock) Duck; it is because of the preparation - typical when making a duck dish. Veggies can be interchanged and so can be "the meat". Basically, it is the sauce we are after :-)
VEGETARIAN DUCK:(?? su ya) 300 g seitan1 tsp corn starch2 tbsp oil2 cloves garlic1 tsp grated gingerroot1 fresh chilli 1 green bell pepper120 ml veggie broth2 tbsp soy sauce2 tsp rice wine1 tsp sugar (optional) 1 tsp sesame oilPrepare the veggies - chop the bell pepper, grate the ginger and slice the garlic. Chop the chili finely. Cut the seitan into bite-sized pieces. Heat the oil in a wok, add the garlic, ginger and chillies and stir-fry for a minute. Add the seitan and stri-fry for about two minutes. Add the bell pepper and fry for another minute or two. Add the liquid and stir well. Let simmer until the bell pepper is just about done. Take a bit of the sauce out of the wok and mix together with the cornstarch. Add to the dish and cook until thickened. Set off the fire, mix in the sesame oil and serve with fresh cilantro leaves. ![]() related searches : Day
