A Bread, a Brownie and Wonderful Zucchini All The Way!
![]() Sometimes simple things in life can bring in windfall gains and mine came through the wonderful vegetable Zucchini I bought this weekend. Yes, this small veggie got transformed into three different delectable dishes for my family last Sunday. A bread, a brownie and a few pancakes. Thought of posting all together but then restrained myself doing the same, as the post will become too long and will be difficult to categorize all. So here are the two Zucchini delights for you to indulge in…a bread and a brownie. Don’t miss out on the easy & quick breakfast of Zucchini savory pancakes. The plain Zucchini bread with no other flavors and very less of sugar tasted very good and was liked by me and my hubby. The chocolate in the brownies marred the flavors and taste of the veggie but anyway became a hit with my kids Zucchini – a summer squash is a delicate vegetable from Cucurbitaeae family. It has a very thin & smooth outer peel and soft creamy flesh inside unlike the other cucumber varieties, which makes it a great baking food ingredient. The veggie which was not a common sight a few years back is readily available in the local markets now, so don’t wait just bake or cook something with this wonderful veggie. A wonderful vegetable for the summer, try it in salads and refreshing Raitas. Ingredients; (12 slices of bread) 1/2 cup of Wholewheat flour 1 cup of Refined flour 1 cup of grated Zucchini 1/4 cup curd/yogurt 1/2 cup of Sugar 1/4 cup of vegetable oil Juice of a small orange 1/4 cup Raisins/cherries 1 tsp. Baking soda 1 tsp. Baking powder 1 tsp. Vanilla essence
Method; Grease a baking bread tin with oil and preheat in the oven at 180°C for 10 minutes. Wash and grate the Zucchini, I got 2 cups of it. Take out the juice from the orange and mix it with the grated Zucchini. Sift the flour, baking powder, baking soda twice and keep it aside. Take sugar and oil in another vessel and whisk it till the sugar is dissolved. Add curd, vanilla, grated Zucchini, raisins, cherries into it. Pour the liquid mixture in the dry flour mix and stir the batter lightly to combine all the ingredients. Pour the batter into the greased bread tin and bake it at 180°C for 30 minutes or till done. Cool it completely before slicing the bread. Serve it as it is or sprinkle powder sugar if desired.
The bread is very moist and light, raisins in it gives the slight sweet taste to this loaf. I baked both the goodies together, but took out the brownie tray a bit earlier. Zucchini Brownie Ingredients; 1 cup Refined flour 1/2 cup grated Zucchini 2 tbsp Cocoa powder 2 tbsp. curd/yogurt 1/2 cup sugar 1/4 cup of oil 1/2 tsp. baking powder 1/2 tsp. baking soda 2 tbsp Walnuts 1 tsp. Vanilla essence Zucchini delights and a perfect way to celebrate a weekend. Method; Grease a square baking tin with oil and preheat in the oven at 180°C for 10 minutes. Wash and grate the Zucchini. Sift the flour, cocoa powder, baking powder, baking soda twice and keep it aside. Take sugar and oil in another vessel and whisk it till the sugar is dissolved. Add curd, vanilla, grated Zucchini and walnut pieces into it. Pour the liquid mixture in the dry flour mix and stir the batter lightly to combine all the ingredients. Pour the batter into the greased bread tin and bake it at 180°C for 20 minutes or till done. Cool it completely before slicing the bread. Serve it as it is or sprinkle powder sugar if desired. My son enjoyed this Zucchini brownie more than the plain bread version. A great way to introduce veggies in kids diet are these delightful Zucchini treats! Notes; Since I wanted to make a bread and not a cake the sugar quantity is less. You can increase the quantity if you like much sweeter bread. Add lemon zest and juice of a lemon for a better flavor. You can add 1 tbsp of cocoa if you wish to get a chocolaty Zucchini bread, but increase the liquid quantity by 1 tbsp also. Raisins (Kishmish) and the cherry pieces gives the necessary sweet lift to this moist and very supple bread. Spread a teaspoonful of any fruit jam and pack it in your kids’ snack box for a healthy treat.
