A Chance of Rain with a Side of Chipotle Meatloaf
It was another rainy/gloomy day in Connecticut. The weather has been really interesting this summer but we have made the best of it. Here is what I harvested from our garden today. I was pretty psyched to start having fresh veggies to work with. I will be having fresh cucumber with my sandwich tomorrow! With the gloomy day came my culinary inspiration for tonight?s dinner. I wanted something that I could prepare and than forget about it. I took a Mom on the Run Favorite, Stuffed Meatloaf, and made it into a spicy, smokey masterpiece. Well as much of a masterpiece meatloaf can be. Spinach Stuffed Meatloaf Adapted from Williams-Sonoma Essentials of Healthful Cooking 1 1/2 lbs lean ground beef or turkey Pre-heat oven to 350 degrees. Spread meat mixture into the prepared cookie sheet to make an even layer. Cover the plan with plastic wrap. Refrigerate for 1-3 hours.
Lifting the foil along the long side facing you, roll up the meat and stuffing like a jelly roll, pushing it forward a bit at a time and lifting the foil away, until the long log has formed. Pat the log gently to compact it. Brush it with a little bit of EVOO and center it on the pan.
Let stand for a few minutes. Enjoy! Here is my dinner plate. Don?t you wish the screen was scratch and lick? Everyone in the family loved this new meatloaf creation.
