Amber Waves of Grain

Wow, it’s been a busy day and it’s nowhere near being over! I spent the whole day doing errands and housework and met Almanzo for a greasy egg white omelet in between. However, I did produce this masterpiece:

I do not know why I insisted upon making eleven cups of homemade granola on an already busy day when I had tons of looming deadlines and errands to run. All I knew was that I couldn’t go another day living without Miraval’s swiss muesli so it just had to be done.





Warning: to those that go through the effort of making the homemade granola to produce the bircher muesli, I found that I needed WAY more than 1/4 cup milk (as the original recipe called for). I needed more like…..two cups milk? I used soy milk, too. I wanted it pretty runny so it could thicken up overnight…that oat bran really does just suck the liquid right up! Now I have a week’s worth of swiss muesli sitting in tupperware in my fridge and about ten cups of extra homemade granola that I’m shipping off to friends tomorrow. I’ll let you know how the final outcome turns out!





Because I was already a hot sweaty mess from standing in front of the stove stirring granola all day, I decided to just keep things simple with a green salad (topped with shredded carrots, Athenos feta and Annie’s raspberry vinegarette) and a bowl of TJ’s tomato soup.

And I used the stove as a table while I stood and ate my dinner. Ahhhh back to reality!





I’m rushing out the door to bible study then have a late night of writing to do to meet an early morning deadline. Pray for my sanityyyyyyyyyyyyyyy
