Banana Oat Bran Poppy Seed Mini Muffins

Once we got home from swimming, we were ready to relax and enjoy the rest of our Sunday. There is something very satisfying about having your kids clean and house semi-clean and organized. Relaxing for me means baking. I had 4 over-ripe bananas, that I wanted to use and my daughter, Zoe suggested we make muffins, mini-muffins to be exact. We came up with Banana Oat Bran Poppy Seed Mini Muffins. They turned out very moist and hearty and a split between a lemon poppy-seed muffin and a classic banana bread. Yum.

Banana Oat Bran Mini Muffins

1-1/4 cups whole wheat pastry flour
1 cup oat bran
1/4 cup wheat germ
1/4 cup Pizzey's Premium Milled Flaxseed
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/4 cup honey
1/4 cup vegetable oil
4 small bananas, mashed
1/2 cup buttermilk
2 teaspoons lemon juice
2 tbsp poppy seeds

Cooking Instructions

1. Preheat oven to 350 degrees F. Lightly grease a 24 mini muffin pan.
2. In a large bowl, mix whole wheat flour, oat bran, wheat germ, flax, baking soda, baking powder, and salt.
3. In a medium bowl, beat together eggs, honey, and vegetable oil. Stir in bananas, buttermilk, lemon juice, and poppy seeds.
4. Make a well in the center of the wheat flour mixture, and pour in egg and banana mixture. Stir until just blended. Spoon into the prepared muffin pan.
5. Bake 25 to 30 minutes in the preheated oven, until a toothpick inserted in the center comes out clean.



While the muffins were baking, I was hungry for a snack and bought the most beautiful Tentation Apples and was dying to try one. The Tentation apples are a modern take on the Golden Delicious and have a beautiful orange flush. It was tart and sweet and crunchy. I like firm apples and this was like a Golden Delicious but a bit firmer. Loved this apple and will be picking some more up the next time I hit the grocery store.

I ate it sliced with some sprinkled cinnamon on top along with 2 turkey roll-ups. A little protein punch. And check out the lemon water. I am on my 8th glass of the day!
