Barbecue Pulled Pork
If you have been following FIQFOOD you know that I am obsessed with Southern Food. I've done cornbread, braised kale, pulled turkey, beef ribs, and pork ribs now it's time for some pulled pork. I passed by a Key Foods (cheaper of the NY grocery stores) in the East Village and decided to have a peak (grocery stores and markets just do it for me what can I say?). I picked up some liverwurst (I think I could live off liverwurst and bread...gross right?) and eggs. Then these enormous hunks of meat caught my eye, whole bone-in pork shoulders. Here is my chance, pulled pork time baby. I bought a 5 lbs shoulder for $5, so cheap...love it. How am I going to cook this Flinstoneian hunk of meat? Ideally, like all barbecue, smoking is the best option but all I have to work with is a small New York City oven...it'll have to do. The plan: Marinate it overnight with a dry rub then roast it at 300 degrees F for 6-8 hours. Recipe: (serves 4) 4-5 lbs pork shoulder bone-in Dry rub: 1/4 cup dark brown sugar 1 tbsp paprika 1 tbsp black pepper 1 tbsp granulated garlic 1 tbsp onion powder 2 tsp cinnamon 2 tbsp Kosher salt Coat pork shoulder with all the dry rub and place into a baking dish. Cover with plastic and place in the refrigerator to marinate for at least 2 hours. Preheat oven to 300 degree F. Place pork in the oven and cook for 6-8 hours or until meat begins to fall apart. Remove pork from the oven and let rest for 15 minutes. Using 2 forks pull the pork meat apart. The pork simply melted in your mouth...sooooo good. A little sweet and tons of flavor. Now you can't call it barbecue pulled pork without barbecue sauce. So I made my delicious smokey chipotle barbecue sauce. Chipotle Barbecue Sauce Recipe: 1/2 onion medium sized rough chop 4 cloves garlic rough chop 3 chipotle pepper in adobo sauce (add or subtract depending on your tolerance for spice) 2 tbsp worcesterchire sauce 2 tbsp brown mustard 1 1/2 cup of ketchup 1 tbsp tomato paste 1/2 cup apple cider vinegar 1/2 lemon juiced 1/2 cup dark brown sugar 1 tsp cinnamon 1 tbsp paprika 1/4 cup water 1 tbsp canola oil salt to taste In a medium sized sauce pan sweat onions and garlic in canola oil at medium high heat. Add cinnamon, paprika, and tomato paste and cook until contents begin to stick to the bottom of the pan. Add all the remaining ingredients and cook until thick. Using a blender or food processor, puree the sauce until smooth and add salt to taste. Now my favorite way to eat barbecue pulled pork is in a sandwich. Potato bread bun, pulled pork, barbecue sauce, and cole slaw...damn I'm good. It was absolutely delicious. Sweet and crunchy from the cole slaw, crazy pork flavor from the pulled pork, and a little spice and smoke from the barbecue sauce came together awesomely. Make it! Eat it!
