It's the time of the year where it's starting to become cooler and the days are starting to become shorter. This is the time where we turn to comfort foods to satisfy the fall/winter blues. Ever since Hurley surprised me with a crock pot for Christmas last year, I've made several hearty meals during the cold season. Slow cooking is something that can done be all year around. This particular recipe is something that's done mostly during the fall and winter season. Beef stew is a comfort food favorite because it is hearty and very satisfying! This recipe is so easy that you can forget about it all day. And why is that? Well, because you will only be using a crock pot. It's a simple recipe that's bursting with flavor by the time it's ready to be served. You cannot have beef stew without cornbread because they go hand in hand together making the meal experience very comforting and delicious at the same time!

Beef Stew
1 package of beef stew cubes
1 cup Carrots cubed
1 cup Celery cubed
1 onion cubed
3 Russet Potatoes chopped and cubed
1 packet of Brown Gravy mix
3 tbsp of Italian Seasoning by McCormick
2-3 tbsp Cumin
2 tbsp Basil
2 tbsp Onion Powder
1 tbsp fresh Garlic minced
2 Beef Bouillon Cubes
3 Tbsp Worcestershire Sauce
2 Tbsp Ketchup
1 cup water
4-5 cups Vegetable Stock*
*It depends on how big your slow cooker is and how much food you're going to make


Season beef cubes with Italian seasoning, then coat them with flour. In a medium sized pan over medium-high heat, lightly coat the pan with extra virgin olive oil. Once the pan is hot, brown all sides of the beef cubes.

Remove the beef cubes and place them into the Crock Pot. Pour some vegetable stock into the pan to pick up the bits. The juices in the pan give the beef stew great flavor! Pour the stock into the Crock pot along with the carrots, celery, potatoes, onions, garlic, Italian seasoning, onion powder,cumin, basil, beef bouillon cubes, Worcestershire sauce, and ketchup.

Pour water into the beef stew mixture and stir until everything is mixed in. Now it's ready for the vegetable stock. Pour the vegetable stock into the crock pot according to how much food you're making. The stock should be about an inch above the ingredients since it will be cooking for 6 hours.

About an hour or so before serving, pour the brown gravy packet into the beef stew. It helps thicken the stew.

Set the Crock pot on Low for 6 hours and you're all set! You can spend the rest of the day relaxing or even go out shopping. Either way, when you get home dinner is already waiting :)
