Brenda's Quick Enchiladas
Recipe source: Brenda Anderson 24 individual chicken tequitoes 1 can chicken broth 8 oz. sour cream 16 oz. mozzarella cheese, Cheddar cheese, or monterey Jack cheese 1/2 cup green onions, thinly sliced (I used chives) Sliced Jalapenos (optional) Line the bottom of a large baking dish with the taquitoes in a row. In a medium bowl, mix sour cream and chicken broth together with wire whisk until smooth and creamy. Pour over taquitoes. Top enchiladas with cheese. Bake in a 350 degree oven for 20-30 minutes or until cheese is bubbly. Note: If you like more sauce, just increase the broth and sour cream.
