Brinjal Masala/Brinjal Gravy/Vankaaya Masala/Eggplant Masala/Kathirikaai Masala/Baingan masala
![]() Ingredients : 500 gms Brinjals 1 cup Coconut paste 1 medium Onion finely chopped 5-6 green chilies ( cut vertically) 2 Cinnamon Sticks 2 Cloves 2 small Bay Leaves 2-3 tsp Ginger-Garlic paste 1/2 tsp Turmeric 3 tsp Coriander powder 3-4 Red Chili powder(or as desired) Salt to your taste Freshly chopped Coriander leaves 6-7 tbsp Cooking Oil METHOD : Wash,cut the Brinjals into four,put them in water with some salt in that water(otherwise the Brinjals will turn black in colour)and keep them aside. Heat Oil in a non-stick pan/Kadai. Add Cinnamon,Cloves,bay Leaves n immediately add Onion and Green chilies. Once Onion are cooked add Ginger-Garlic paste and fry it for few secs or until the raw smell is gone. Then low the flame add Coriander powder,salt, Red Chili powder and fry it for 5-6 secs.....(take care that these masala's don't burn, if you feel its burning then immediately add small amount of water). Add coconut paste and fry even this for 2 mins. Then add the Brinjal slices and 1 cup of water,mix well and cover it. Cook until the gravy becomes thick or until the Oil oozes out. At last sprinkle freshly chopped Coriander Leaves. Serve it with Steamed Rice,Vegetable Biryani/pulao,Non-Veg Biryani,Roti or any kind of Indian Breads. Note: Use fresh young Indian Brinjals(Purple/Green),do not use the Brinjals which has alot of seeds it in. This dish tastes good if its a bit spicy and contains sufficient Oil.
