Brussels/Mung (Sprouts) Soup
It's drizzling here since morning and it's very cold outside. I wanted to have something hot, so prepared this mung sprouts soup. It's very simple, easy and healthy.
Ingredients: 1/2 cup mung sprouts 4 brussels sprouts 1 carrot 1/2 onion 2 medium tomatoes salt and pepper to taste Tempering: 1 tsp oil 1/2 tsp mustard 1/2 tsp jeera 1 whole red chilli or 1/2 tsp chilli flakes coriander for garnish Preparation: Wash brussels sprouts and carrot and chop fine. Chop onion. Place mung sprouts, brussels sprouts, carrot and onion in a big sauce pan add enough water and boil. Once boil, simmer for 15 minutes. Cool it completely. In a blender or food processor puree tomatoes, add the above boiled mixture, blend thoroughly into smooth paste. Transfer the mixture into saucepan add 11/2 to 2 cups water according to your preferred consistency and boil. Mix in salt and pepper In a small kadi, heat oil and temper in the given order, add to the boiled soup, garnish with coriander leaves. serve hot. related searches : Brussels
