1 tablespoon oil

1/2 med onion

2 teaspoons garlic

salt and pepper

3 cups water

2 cups chicken broth

3 chicken breasts

1 can green chilis

1 can diced tomatoes

1 can corn

1 can black beans

1 1/2 teaspoon cumin

1/2 teaspoon paprika

2 teaspoons lime juice

4 ounces sour cream

2 teaspoons FRESH cilantro


  • Sautee over medium heat until translucent.
  • Sautee 2-3 min, or until fragrant.
  • Cook at med-high heat until chicken is cooked throughout.
  • Remove chicken pieces. Once cooled, shred into strips and add back into soup.
  • Simmer on med-low heat for at least 1/2 hr.
  • Garnish with dollop of sour cream, cilantro and tortilla chips.
