Chicken soup: chicken sopas

200 g noodles/pasta (macaroni, or any shape you like)

1 piece, chicken breast, cooked and cut into strips

2 pieces chicken liver, cooked and cut into bite size pieces (optional)

2 tablespoons butter or margarine

2 tablespoons olive oil

1 medium carrots, peeled and chopped

1 small onion, chopped

4 cloves garlic, chopped

2 to 3 cups fresh milk or 1 big can evaporated milk

10 to 15 cups of water (add more if you want more soup)

2 to 3 slices of cheese, melted cheese

1/2 teaspoon ground pepper

scallions or spring onions for garnishing

salt to taste

2 boiled eggs (optional)


  • Cook the chicken meat and liver in a small pot with boiling water (about 3 cups). When cooked, cut chicken meat into strips and liver into bite sized, (set aside the chicken broth).
  • Medium heat, put the olive oil, then the butter. Saute garlic and onion.
  • Add the chicken meat ,add salt and pepper, after a minute add the uncooked noodles, mix it immediately.
  • Add chicken broth , then add water, bring to boil .
  • Add carrots, liver, milk, cheese, and a pinch of diced scallions or spring oninons then stir. Let it simmer until the noodles are cooked.
  • Serve it hot with scallions and boiled egg.
