Carrot Egg Stir Fry
Ingredients: Carrot ¼ Kg Egg 2 or 3 Vegetable oil 2 tbs Sambar onion 10 Mustard seeds ½ tsp Black gram (split) ¼ tsp Green chilly 2 Curry leaves 2 spring Pepper Powder 1 tes Salt To taste Procedure: 1. Wash and scrap the skin from the carrot and grate it. 2. Take a bowl and add 2 tbs of water. Then add salt and pepper powder (based on the quantity of eggs), and mix them well. 3. Then add the eggs and beat the mixture well. 4. Heat the oil in a pan, splutter mustard seeds, add curry leaves, chopped green chillies and chopped onion. Fry till the onion turns into golden brown. 5. Then add the grated carrot and salt. Sprinkle a handful of water. 6. Close the lid of the pan, stir it occasionally. After the carrot becomes half cooked, add the egg mixture and mix them well. Cook until the egg forms as pellets. Serve with Rasam rice. related searches : Carrot
