Catch of the week ? Silver Trevally
This week catch is Silver Trevally also known as Blutter, Croaker, Silver, Skipjack, Skippy or White Trevally. Quote from Fish Australia Book By far the most common trevally in coller southern waters, this fish is normally caught in sizes ranges from juveniles weighing half a kg in estuaries to adults from 3 to 5 kg around reefs and open headlands.
I asked my angler to fillet the trevally on one side and leave the other side on the bone as I am trying out 2 recipes. The fillet is to be grilled and the other parts is to be steamed. 1. Tim Trevally Tauco (Steamed Trevally with Preserved Yellow Bean) Normally this recipe use Pomfret (Promphet) however I replace it with Trevally, actually it doesnt turn out bad at all. Tauco is widely use in South East Asian Cooking specially in stir fry dishes, it is less salty compare to black salted bean (hence why the name huh). Most steamed fish recipe use spring onion and coriander, but not for this dish, you use garlic and ginger to reduce the fishy taste if any. I have had this dish with raw shallot but i like to soften it abit before adding it onto the fish, it adds sweetness to the overall sauce.

![]() Marinate I used the same ingredients as the steamed dishes plus rosemary. pound garlic, ginger, shallot, chilli and rosemary in mortar into paste and marinate the fish for at least 15min before grilling leave about a tablespoon for sauce. For sauce, mix a tbsp of the paste with Kecap Manis and any chilli sauce (as much or as little). After dinner my angler say “the chilli sauce was good” sooooo does that mean everything is blahh and only chillli sauce is goood . oh well. i love both dishes that is most important hey ![]() Grilled Trevally With Rosemary Garlic & Chilli
