Cheese Egg Omelette with a Side of Fried Potatoes
This recipe was inspired by a diner breakfast. Diners are I would say restaurants with mainly traditional American food served in a casual environment. The food is simple and so delicious. I once had breakfast in a diner around Philadelphia, I cannot recollect the name, they had country style scrambled eggs served with a side of fried potatoes. This is today's brunch. So Come on over and join me for brunch. Cheese Egg Omelette Ingredients: 1) 4 eggs 2) 1/2 cup finely chopped onions 3) 1/2 cup finely chopped tomatoes 4) 2-3 green chillies finely chopped 5) 2 slices American cheese or cheese of your choice cut into strips 6) Salt to taste 7) Oil Preparation : 1) Whisk the eggs in a Bowl. Add the chopped onions, tomatoes, green chillies and season with salt. 4) Fold into half and serve along with the side of fried Potatoes. Fried Potatoes Ingredients : 1) 2 cups potatoes diced 2) 2-3 green chilles finely chopped 3) salt and white pepper to taste 4) 2 tablepoon freshly chopped Cilantro 5) 1/4 teaspoon mustard seeds 6) 1/4 teaspoon turmeric powder 7) Oil for shallow fry. Preparation: 1) Heat enough oil in a pan to shallow fry. 2) Add mustard seeds and when they splutter add the potatoes and green chillies. 3) Add Turmeric, salt and pepper. 4) Let it Cook it on medium flame for around 8- 10 minutes or until cooked. They will get a slight crunchy texture. 5) Ready to serve. Garnish with fresh Cilantro. related searches : Cheese
