- Peel and cut the potatoes into small squares and place in a large bowl. Add olive oil, season well with sea salt .
- Heat a large, non-stick frying pan over high heat. Tip in the bowl of potato squares and make sure they're evenly spread across the pan.
- Stir regularly with a wooden spatula to avoid charring, and gently break up any larger batches of potato squares sticking together .
- Fry the potatoes until they turn a deep golden brown color, roughly 15-20 minutes .
- Push the potatoes aside to create four pockets (aka the nests) and crack an egg into each one and season with salt and pepper.
- Continue frying until the egg whites are set. Plate and serve with a generous helping of green tabasco .
