Peel and cut the potatoes into small squares and place in a large bowl. Add olive oil, season well with sea salt .
Heat a large, non-stick frying pan over high heat. Tip in the bowl of potato squares and make sure they're evenly spread across the pan.
Stir regularly with a wooden spatula to avoid charring, and gently break up any larger batches of potato squares sticking together .
Fry the potatoes until they turn a deep golden brown color, roughly 15-20 minutes .
Push the potatoes aside to create four pockets (aka the nests) and crack an egg into each one and season with salt and pepper.
Continue frying until the egg whites are set. Plate and serve with a generous helping of green tabasco .
