Chicken Quesadillas

I mentioned in the grilled steak and corn fajitas entry that I am a fan of Mexican food. It's insanely popular here in this house. One of things I love about Mexican food is that it's versatile. You can choose your own ingredients according to your taste. Besides, spicy food is best for clearing out your nose when you're sick with a cold. I was fighting a cold that day and I didn't feel like cooking a big meal. I thought, "Why not make something that's quick and easy?" End result was the greatest quesadilla ever made.

Chicken Quesadillas
1 1/2cups sliced grilled southwest style chicken
1 tbsp Emeril Southwest seasoning
1 tsp cayenne pepper
1 tsp chili powder
1 tsp paprika
1 tsp black pepper
1 onion chopped and cubed 2 green pepper chopped and cubed 4 tbsps extra virgin olive oil 1 cup coarsely freshly grated Monterrey Jack cheese
1 cup Sargento Nacho & Taco cheese
2 Burrito sized flour tortillas
1 cup of lettuce

Put Chicken Cutlets in a big bowl. Pour two tablespoons of extra virgin olive oil and add Emeril southwest seasoning, cayenne pepper, chili powder, paprika, and black pepper onto the chicken. Mix thoroughly to make sure seasoning is evenly distributed on the chicken. Place the chicken on a grilling pan over medium high heat and cook for about 10-12 minutes or until the juices run clear. Set aside and slice chicken into strips.

Pour two tablespoons of extra virgin olive oil into a large pan over moderate heat and then add the onions and peppers. Cook until tender, which is about 10-15 minutes. Add chicken into pepper and onion mixture.

Pre-heat a non stick pan before placing the tortillas. Put one tortilla in the non stick pan over medium low heat and spread 1/4- 1/2 cup chicken-onion mixture over half of tortilla. Fold other half over to form a shape of a half-moon, pressing the quesadilla into the pan. Flip over to cook the other side until cheese is melted and golden brown. Grill marks should appear. It should take about 5-10 minutes total per quesadilla.

Cut the quesadillas into a triangular shape almost as mini slice of pizza. Add shredded lettuce as topping. Add hot sauce if necessary.
