Chicken Quiche

Ingredients

2 Chicken breasts
1 shallot
6 eggs
1 tbsp nutmeg
3 tbsp heavy cream
5 cherry tomatoes
salt and pepper
1 pie crust
1 tbsp fresh parsley


Preheat oven at 400ºF (200ºC)
Start by defrosting the pie crust for about 10 minutes.
Cut your chicken breasts into small pieces and saute them until they are almost cooked. This will take about 5 minutes.


Place your pie crust on a pie baking dish and press down. Then poke it with a fork in different places. Set aside.
In a big bowl break your eggs, add the heavy cream and a the nutmeg. Mix everything together until everything is well combined. Add the chicken. Chop the shallot finely and add it to the mix too. Combine all ingredients, then toss them on top of the pie crust.


Cut the cherry tomatoes into very small dices and sprinkle on top of the quiche to decorate it.


Place pie in the oven for about 40 minutes. Take it out and shower with some finely chopped parsley.

You can eat this quiche cold or hot. And you can have it with some salad or just as an appetizers.


In our family this is just another way to combine eggs, cream, and other ingredients to make a quiche! Quiche is simple, fast, convenient and not that many children will be opposed to a nice slice of quiche. For french people quiche is like pizza!
