Chicken Ranchero --from Mexican cuisine
One fine afternoon while i's mazing thro' blogs i've found this recipe from a tv cookery show. Actually, people who are close to me, knows that am not a big fan of trying other cuisine except chinese and thai.. But the dish am gonna prepare was very simple and luckily i bought chicken the day before. So , i did try a hand on preparing this one. To be very frank, it was good and am not saying that bcos i made it.. For a change try once and find out urself..
Ingredients : Chicken Breasts /Tenderloins -- 2 nos. Tomato puree --from 1 medium tomato (U may use storebought mexican flavoured tomato sauce ) Tomato finely chopped -- 1/2 Onion finely chopped -- 1/2 Garlic finely chopped --3 pods Capsicum finely chopped -- 2 tbsp Mushroom sliced -- 2 nos. ( optional -- but i prefer adding for myself) Jalapeno pickle --finely chopped -- 1 tbsp Cheese (ur choice) -- 1 tbsp (optional) Salt -- to taste Pepper powder -- 1/4 tsp Butter --1/2 tsp oregano and thyme --1/4 tsp To marinate : Olive oil -- 1 tsp lemon juice -- 3 drops Salt -- as reqd Pepper powder -- 1/4 tsp Method : First marinate the chicken piece with the given above and let it sit for minimum half an hour. Take a kadai and add little bit of olive oil. Fry the marinated chicken until it's tender. In the same pan add the butter and saute the garlic. Add the onion and the herbal leaves and saute well. Now throw in thecapsicum,mushroom,jalapeno pickle and scald well. Add the tomato puree and blend them. Cook for 30 secs and immediately add the cooked chicken now. Combine everything together and u may add very little of water if u think u need it. Cook till the water dries up and finally add the cheese and plate it.
