Chicken Satay
This is one of my go-to recipes for an extremely quick chicken dish. 10 minutes from start to finish. Gotta love it!
3 chicken breasts 1/2 cup breadcrumbs 2 Tbsp olive oil 2/3 cup bottled Thai peanut sauce 2 Tbsp lime juice (optional) scallions (optional) handful of unsalted peanuts, crushed Directions Pound chicken breasts thinly, then slice into strips. Pour breadcrumbs into a shallow bowl. Heat olive oil in a grill pan or sautee pan. Dredge chicken strips through breadcrumbs, then place onto pan. Cook until chicken is done, 2 - 3 minutes per side. In a small serving bowl, mix together peanut sauce and lime juice. Top with scallions and peanuts. This is your dipping sauce. Serve with grilled bok choy and a salad.
