Chicken with cashew nuts
½ kg chicken50 gm grated coconut6 plump garlic cloves½ tsp Ginger
1 ¼ tbsp coriander seeds¾ tsp cumin seeds3 whole dried red chilies3 cloves1 ½ inch cinnamon stick4 oz cashew nuts1 medium onion chopped2 tbsp oilto taste Salt Directions In a large frying pan within out any oil or fat roast the coconut, garlic, ginger, coriander seeds, cumin seeds, red chilies, cloves and cinnamon over a low heat.After 5 minutes add 1 oz of the cashew nuts and the onion and roast for a further 10 minutes stirring all the time. Allow it to cool and then grind the mixture with ½ cup water till a fine paste. (when grinding make sure u grind to smooth paste otherwise the texture of the curry would look curdled.Grind 1 oz of the cashew nuts with a little water to form a paste and set asideHeat oil in a large cooking pot add the ground spice mixture and fry for 10 minutes over a low heat. Add the ground cashew nuts and salt to taste and fry for a further 2-3 minutes.Add the chicken, turn up the heat and fry for 5 minutes. Then add 1 ½ cups of water and leave to cook for 10 mins covered.Add the remaining cashew nuts and continue to cook until chicken is done. related searches : Chicken
