![]() Cooking Tips - How To Cook A Perfect Beef Today, I’ll try to answer the ancient question of how to cook the perfect steak. For milleniums, chefs and home cooks have debated what is the best approach – and to some extent I guess the jury is still out. Here is one way, and in my mind it comes pretty darn close to perfection. It’s not difficult, and the end result is really fantastic. What you need: 1. Great steaks. If you have a butcher nearby, get your meat from there and not from the supermarket. The quality of your meat pretty much decides what the end product will taste like – and lousy meat simply can’t be saved by any fancy kitchen technique out there. So always get the best steaks you can afford! 2. A couple of cloves of garlic, some sea salt and freshly ground pepper. 3. Fresh herbs – oregano, thyme, rosemary, or any other herb you like. 4. Oil for frying, and a knob of really good butter (one for each steak). 5. Time. Time to take the steaks out of the fridge well before cooking them, and time to leave them to rest after being cooked. HOW TO 1. Take the steaks out of the fridge at least 45 minutes before cooking them. This will let the temperature in the meat rise, and make them easier to cook evenly. 2. Pad dry the steaks with kitchen towel, and season with salt and pepper. 3. Heat the pan well with some oil in it, you’ll want to be cooking at a pretty high temperature. Add whole cloves of garlic and stems of fresh herbs to the pan when hot. 4. Place the steaks in the pan, and cook on one side for about 1,5 minutes until golden brown. Turn the steaks over and lower the heat to medium. 5. Add butter to the pan. When melted, scoop the butter over the meat with a spoon. Keep doing this throughout the rest of the cooking process. 6. Remove from the pan when cooked to desired level – here is one way to tell – and leave to rest for at least 10 minutes (under foil or in a warm place). Season with salt and pepper if needed. 7. Slice the steak as in the picture and garnish with fresh herbs. Serve with a pan sauce or just with a slice of lemon. BON APPÉTIT! related searches : Cooking
