Daily Dinner Series (3): How Green Was My Dinner!!

 We've been slammed with the green brigade this whole month. The first week of March,  baby P's daycare celebrated Dr. Seuss's birthday, which meant that they read the same books over and over again. Now P has an exceptional fondness for 'Green eggs and ham'; but I hid that book away after failing to make her understand why she can't eat eggs and ham for breakfast. She re-discovered her love at school during the Dr. Seuss week. Her teachers were thoughtful enough, and worked with me to tell P that she all 'green' things- like vegetables- are healthy, not only green eggs and ham. So I've had her asking for 'yummy in my tummy green things', every other day.


Then Ms. A Jr. came home bursting with tales about St. Patrick's day, green leprechauns and clover, and pots of gold under the rainbow. It was like I was living in green all week. There was no way that I could get away without some sort of acknowledgment of this largely Celtic Holiday in our household. To be fair, I did browse the internet for some traditional Irish recipes. But, even the simplest one seemed too involved for a weeknight dinner. So I  tried one recipe, and improvised the rest. Here's a peek for you from my kitchen.

Spinach-Tomato-Carrot Soup with Cheese and Chives Irish Soda Bread






And then we had our make-believe Irish, but very green Indian dinner.





Scallion Fried Rice, Cauliflower-broccoli-peas stuffed parathas with cilantro chutney


The girls got to eat parathas with yogurt and butter- the chutney was way too spicy for them!! And I got to dream of not-so-green things last night!


A note about my trial run of Irish Soda bread; I thought the taste of soda was overpowering. Although this time, I did follow the recipe precisely. Next time should be better; hopefully.
