Chop your papaya into thin long strips. A grater with the ability to shave off strips is the best.
Squeeze limes into papaya slivers. Throw in your chopped garlic, par-boiled long beans, chopped mint, fish sauce, chili pepper, green onions, salt, pepper, honey, and sliced tomatoes.
Mix throughly and let sit in refrigerator for three to four hours.
Before you eat, sprinkle crushed peanuts and decorate in center with two or three whole mint leaves.
You can also add some sliced boiled shrimp on top. Serve on a bed of lettuce on individual plates.
