- Chop your papaya into thin long strips. A grater with the ability to shave off strips is the best.
- Squeeze limes into papaya slivers. Throw in your chopped garlic, par-boiled long beans, chopped mint, fish sauce, chili pepper, green onions, salt, pepper, honey, and sliced tomatoes.
- Mix throughly and let sit in refrigerator for three to four hours.
- Before you eat, sprinkle crushed peanuts and decorate in center with two or three whole mint leaves.
- You can also add some sliced boiled shrimp on top. Serve on a bed of lettuce on individual plates.
