Day 2- Van Horn to Phoenix, AZ

Good Morning!

My internal clock is still on Central Time but we have crossed through Mountain Time and are now in Pacific Coast Time so it is only 5:19am.  Phew.... we made it through another long day of driving. 

Highlights of Day 2:

It was Steve's 41st Birthday (which I am sure he will always remember waking up in beautiful Van Horn!)
Driving through God's Country-- West Texas actually has some beautiful Mountain Ranges

Almost running of gas and having to back track to a gas station for fear of not finding one out in nowhere's ville West Texas.  There literally is not anything out there.

Finally getting through Texas and on to New Mexico and AZ

Having to go through Border Patrol Twice (the kids had lots of questions about that-- learning opportunity)

Listening to Alvin & the Chipmunks movie again.....

Eating more Kettle Corn.  Before we left Austin we had to make one last stop at my beloved Whole Food Headquarters and pick up some road snacks.  They were selling Popcorn Indiana Kettle Corn in all sorts of flavors and I remembered reading about it in Shape Magazine as one of the best snacks so I had to buy some.

We bought some of the Aged White Cheddar, Classic KettleCorn and Cinnamon Sugar.  Oh my lord this stuff is go good and hard to resist.

So my day of food went like this:

Breakfast:

Apple
bad cup of coffee
handful of dry Oatmeal Squares

Mid-Morning Snack + Lunch (a bit stressed after having to back track to get gas in nowhere's land)
Probably more than 2 cups of Classic Kettlecorn

Grande Latte (never thought I would be so happy to see a Starbucks... needed my coffee fix!)
 
Large Diet Doctor Pepper-- I am not usually a soda drinker but needed more caffeine and if I am going to splurge and drink soda this is one I like to get at the fountain with lots of ice.  
Hmm.... so far living off coffee, soda and popcorn.... not doing such a great job.  I did also drink tons of water.  Did I mention to you that it was 116 degrees in Phoenix!

Then I added a Whole Foods Chocolate Crinkle Cookie-- these are cookies that have no flour and are made out of egg whites, sugar and pecans.  They are actually relatively low in fat and I am trying to make myself feel better because I was loaded up on a bunch of sugar.

The day ended with a trip to Whole Foods here in Phoenix and I got a fabulous Roasted Plum and Chicken Salad.  It was awesome and I needed some real food by that point.


Once we got here we also had a chance to go and visit my Dad who lives in Scottsdale.  It was nice to see him again and the kids thought it was fun seeing his place.  He has pictures hung up of us as kids and the my kids loved seeing old pictures of my sister's and I.  Lots of laughs and questions about my hair..... which was a different color back in the ol' days.  My Dad has been sick and actually looked good and bad, he has lost a bunch of weight and was wearing shorts.  I honestly don't think I have ever seen my Dad in shorts before.  He was looking very prototypical Arizona Grandpa.  He was in good spirits and enjoyed seeing the grand kids and dog.  Speaking of dog, Gumbo has been quite the good traveler and so far everything is going well..... well okay he did bark a lot this morning and that may be why I am already up but all in all he is doing great!

I took some pictures of God's Country for you on my iPhone but am having trouble loading them up so will have to post them later.  Pretty Mountain Ranges -- long stretches of road.... you get the picture.

We are now going to push on to the Golden State-- California-- oh how I have missed you!  We are going to Anaheim with a stop in Fountain Vally, Ca to take Emmet to Prehistoric Pets, you guessed it, a reptile store that Emmet is dying to go to.  We will spend the day at Disney tomorrow so maybe my bottom spreading will get a chance to firm up a bit.

California here we come!  Excited because now the fun really does begin.
