Day of deliciousness
Hello! Happy Tuesday! I hope your day has been fantastic. Mine has been, well…purely delicious! I started the day with some blended fruit from Main Squeeze… Made of blueberries, peaches, and bananas, with apple juice. My favorite combo! I’ve been on this blueberry kick for a while now. And I saw this treat smiling at me at the register, and how do you pass up a peanut butter chocolate chip vegan cookie? Well, clearly, you don’t… Lunch was leftovers from part of last night’s dinner, compliments of the pilot. Spiced shrimp, and red peppers and asparagus lightly sauteed with minced garlic. I also had 2 (unpictured) pieces of multigrain toast topped with some organic Crofter’s Asia fruit spread. Not the first thing I’d think of to pair with shrimp and vegetables, but whatever…it was yummy! Then, a couple hours later, it was cookie time! Dinner was delicious! Extra lean pork adobo-rubbed tenderloins topped with black beans and pico de gallo all covering organic baby arugula, green beans, and baked fingerling potatoes. The recipe for the potatoes came from an old Clean Eating magazine, and the pork recipe came from the Clean Eating Magazine website. I loved it all! I ended it all with some banana soft serve “ice cream”. Aaannndd now it’s time for some school work and time spent with the pilot <3 .
