Step 1 Take milk in a heavy bottom pan. Turn the heat on medium-high and brig the milk to a boil.
After it comes to a boil reduce the heat to low. And simmer it for 1 hour or it reduces to half. Stir every 5-10 minutes and scrap the bottom and sides of pan. Make sure that milk doesn’t stick to the pan. Below first picture is taken after 30 minutes and second picture is taken after 1 hour.
Then add sugar. Mix well. Let it simmer on low for 15 minutes. Stir in between.
Then add cardamom powder and saffron. Mix well and let it simmer again for 7-8 minutes. Stir in between.
It will look bit of grainy as shown in below picture. Then add chopped nuts and serve warm or cold.
Step 2 Notes
If you are serving it cold then reduce the boiling time to 10 minutes after adding sugar. It will thicken up as it cools.
Don’t go away when milk is simmering.
You can add your choice of nuts.
This is a time consuming dessert,I would not make it.It would be easier to make Panacotta,and add those ingredients,with nuts on top!!!!
