Dill-icious salad and lunchbox sushi with a side of rugby

What seems out of place in my title?


Yeah, exactly…


Last week I was sick, so I wasn?t there to find out first hand what sport I?d be doing for P.E. and during the weekend, a friend of mine told me I would be doing rugby: RUGBY PEOPLE! I?m not built for rugby! Or so I thought?


It turned out to be quite an interesting sport actually. Ok, to be honest, I just thought it was fun running into people. It was a mixed game and it was my first time playing rugby, so I decided to stick with tackling girls this time. But I?m feeling pretty confident now that I might be able to take on the guys next week :P


Onto the eats now?


Since my sushi post, I?ve been trying to find a way of getting my sushi to school, so I worked out a little recipe.


 


Lunchbox Sushi:



carrots
cucumbers
tomato
nori
soy sauce

 



Grate the carrots and cucumbers.
Chop up the tomatoes into small pieces
Squeeze out the juice from the cucumbers (VERY IMPORTANT)
Mix all the ingredients together
Add a little soy sauce to the mix
Roll up in your nori
And place in your badass lunchbox

Prepare to roll?

Place in lunchbox and add other veggies :)


 


 


I have to say, that if you are going to make these the day before like I did, you better make it a double roll :P . They were pretty tasty and it?s definitely worth a repeat, but they were a little soggy the next day? so either dry up the contents or double up the nori.


 


Now we come to the Dill-icious salad, which obviously contains dill (I couldn?t stop myself, come on, you would have given it the same name: admit it!)


I?ve been meaning to try getting some more herbs into my recipes because it?s those little extra things like herbs and spices that give your dish that extra oomph and boy was I right: this salad was amazing!


 


Dill-icious Salad



Spinach
Tomatoes
Dill
Balsamic vinegar


Garlic (optional, but you know how much I like it?)
Chop up the tomatoes and spinach and place into a bowl.
Press the garlic (if you?re using it) and put it into another (smaller) bowl.
Add balsamic vinegar to it.
Mix it together and add salt & pepper if you want
Put the dressing you just made over the tomatoes and spinach
Chop up a bunch of dill
Throw it on top.

Who knew this was exactly what my salad needed?


 


This was so good! I really didn?t expect the dill to make that much of a difference. I eat this salad so often, but the dill really gave it a great taste, it tasted so much more complete; as if that was the missing ingredient! You must try this!


 


And last but not least, I?d like to apologize for skipping posts without notice, but I?m running into issues with homework (especially maths), should be doing it, but somehow I always something more interesting to do.


 


So, just so I get a bit of an idea what you guys want to see, a few questions:


Would you like to see more portable (lunchbox friendly) raw lunches?


Would you like me to put quantities of each vegetable/herb in my recipes?


 


Off to play with my calculator work on maths?
