Looking for a simple recipe that's a real crowd-pleaser? These onion tartelettes tatin are just what you need! The onions are gently simmered with butter, brown sugar and a little balsamic vinegar until they're ultra-melting and caramelized, and already smell wonderful in the kitchen ;) Add a slice of puff pastry, a spoonful of goat's cheese for creaminess, a sprinkling of rosemary... and off to the oven! A few minutes later, you've got golden, fragrant, sweet-and-sour tarts that disappear mysteriously as soon as you put them on the table...

Peel onions and cut into thick slices (8 slices here).
Melt butter in a hot frying pan over medium heat. Drizzle with olive oil.
Place onion slices side by side in the pan. Add sprigs of fresh rosemary, salt and pepper and let the onions brown for a few minutes.
Turn over and brown on the other side. Cover and cook over low heat for 10 to 20 minutes. Keep an eye on them and turn them over from time to time if necessary.
Remove the lid and add the balsamic vinegar and brown sugar. Stir lightly to distribute the vinegar and sugar. Remove pan from heat when caramelized.
Unroll the puff pastry and cut out circles (here 3.5 inches in diameter). You'll need to cut as many circles as onion slices.
Arrange the candied onion slices on a baking sheet lined with parchment paper.
Cover onion slices with puff pastry circles. Prick the tops of the circles.
Bake in a preheated oven at 350°F/180°C for 15 to 20 minutes.
Let the tarts cool slightly before turning them out onto the serving platter. Add fresh goat's cheese and fresh rosemary (you can also add fresh goat's cheese to the onion before covering with puff pastry). Ready, enjoy!
