Dinner in a tent

Holy cow people…..I just fell asleep while sitting upright at the kitchen table checking emails…..Thank goodness tomorrow is MY Friday!!  Shew…..I’m dying this week!


My day started 94 and 1/2 hours ago a long time ago!  Got up super early to hit up Tyler’s 6 a.m. cycle class. 


Pre-workout fuel:



Handful of almonds and about half of this banana……this banana wasn’t ripe enough for me.  I buy bananas green for Russell and then when they start getting all spotty…I eat them.  We are the perfect banana pair!  :)


Summary of morning gym sweat sess:  Tyler tried to kill us and my knee stinks at life!!


Me, Tyler, and Kimmie headed to the  Starbizzle after cycle class.  My camera died, but the usual was consumed….tall cup of Komano Dragon coffee with 1 packet of truvia and steamed skim milk. 


After getting ready for work, I decided french toast made from my homemade bread was in order!


Breakfast:




2 egg whites
heavy dash of cinnamon
1/2 tsp of vanilla extract
1 packet of truvia

Mix well.  Dip bread in egg wash and add to pan over medium heat.



After I plated up my french toast, I topped it with Stonyfield OIKOS organic Greek yogurt and a cut up peach. 



Isn’t frothed milk the most beautiful thing you’ve ever seen?!?!  :)   It’s one of life’s greatest joys in my book!!  This is my mug o’ coffee that headed out the door with me to work…..I might have had Starbucks, but more caffeine was in order this morning!


Lunch: 


Lunch was made from the following:




And assembled at work:



Veggie burger on Arnold’s Thin with slice of 2% milk American cheese topped with broccoli slaw, spinach, and mushrooms.  Newman’s Own Organic Soy crisps on the side along with grapes.



Veggie burger topped with lots and lots of veggies is one way to reach your daily requirement!  The sandwich was delicious…just wish I had some ketchup on it.  Mmmm!


Afternoon Snacks:


The afternoon was nuts at work!  I crammed a PB&J Larabar down my throat literally during a session…..I had it in my pocket and was eating bites when I could get a chance, therefore……no pic!


Finally got to eat my greek yogurt at 6 tonight after all my patients were gone.



This was only about half of a container of greek yogurt….it was the remainder of what was left over from breakfast.  Topped the yogurt with walnut pieces and raisins.


Dinner: 



That would be boneless chicken breast buried in veggies.  My side is on the left…..smaller piece of chicken and I also have radishes and mushrooms.  The other veggies include:



green bell pepper
red bell pepper
red onion
carrots


Topped with Bertolli spaghetti sauce



Formed foil tents and into the oven they went for 30 minutes on 375F.



Pretty dang good for some randomness thrown together in a foil tent!  I have leftover chicken and a few veggies for lunch tomorrow, too!


Ohh and I munched on these while dinner was cooking:



I had never tried these before.  I was unsure after the first bite or 2, but then I started tasting the salty and the sweet.  YUM!  Umm I’m thinking these and PB will become friends reeeeaaaaaaal soon!  :)


 Question of the Night:  What’s your favorite thing to pair with peanut butter?!?!
