Grilled shrimp tacos with wasabi horseradish sauce

Ingredients

Number of serving: 4

For the shrimp:

1 libra large shrimp, peeled and deveined

1 habanero, stemmed, seeded and minced

2 tablespoons olive oil

1 tablespoon Desert Dust seasoning mix or you favorite southwest blend

1/2 cup Cointreau or you favorite orange flavored cordial

kosher salt

fresh ground black pepper


For the slaw:

1 green apple, peeled, cored, and cut into very thin strips

juice of 1/2 lime

2 tablespoons orange zest

1 tablespoon agave nectar

kosher salt


For the wasabi horseradish sauce:

1 teaspoon prepared wasabi

1/2 teaspoon ground ginger

1/2 teaspoon prepared horseradish

1 cup mayonnaise


For the tacos:

flour tortillas

grated Cotija cheese

Preparation

  • For the shrimp:
    Mix all the ingredients from the shrimp section in a medium bowl then add the shrimp and marinate for 30 minutes to 1 hour. Preheat grill to medium high heat and grill the shrimp until just opaque on both sides, being careful to not over cook them.
  • For the slaw:
    Mix the slaw ingredients together in a a medium bowl and allow to marinated for 30 minutes to 1 hour.
  • For the wasabi horseradish sauce:
    Mix everything together and chill.
  • For the tacos:
    Tortilla + Shrimp + Green Apple Slaw + Wasabi Horseradish Sauce + Cotija Cheese = Taco.
