Ducksters and friends...

Assalamualaikum and Salam Sejahtera to all?


?kwekk.. kwek.. kwekkk?? what duck reminds u of? Donald duck from Disney? Haha?

So, what is Ducksters and friends? its recipes of the day...

I remembered the best Duck I ever tasted during my traveling time at one restaurant called ?The Magic Wok? in Queensway, London and until now I am still looking for a good taste of duck? and haven?t got the best result yet, so, any suggestion? But, I have tried few attempts on trying to make the best duck for my satisfaction and this one is close to it? Noo!!! For your info, duck is not my ?top lists? food but hey? its nice to try something for the taste?


Grilled duck breast with herbs buttered vegetables, mango and cherry tomato chutney and pear demi-glace...

Ducksters main... you?ll have to marinate the duck breast?

I used rosemary, thyme, worchestershire sauce, corn oil, salt and pepper for marination and left it covered in the fridge for about 12 hours minimum.

Grilled duck breast until cook.

Tips: remember duck meat a little tougher than chicken, it would take longer time to cook it, if you not sure the meat is fully cooked while the outer side is getting black/burn, roast it in the oven at 200?C for about 10-15 minute.





Tips: you can actually marinate it last minute before cooking but I marinate longer so that, the pungent smell from duck will go and its actually tenderize the meat.


First friend of the Duckster... you?ll have to prepare Herbs Buttered Veggies?



20gm garlic (sliced)
20gm onion (cube)
30gm butter
100gm asparagus (3cm cut)
100gm carrot (baton)
200gm colored capsicum (chunk)
100gm zucchini (chunk)
2gm oregano
2gm rosemary
Salt and pepper


Blanch carrot for about 1 minute. Melt butter in frying pan on low fire, add vegetables in sauté until colored. Add onion and garlic. Add herbs and season to taste.

Tips: I preferred not to blanch vegetables to get the bites when u eat them.


Second friend of the Duckster... Mango and Cherry Tomato Chutney...



150gm sweet mango (peeled and sliced
80gm cherry tomato (cut half)
20gm brown sugar


Cooked all ingredients in pan on low fire and covered. Cook for about 30 minutes.

Tips: this recipe sweetened naturally by mango, you can actually use sour mango but you?ll have to add more brown sugar. Brown sugar also used for coloring purposes.


Third friend of the Duckster, Pear Jus...



5nos pear (skinned and sliced)
100ml demi-glace
20ml cream
Beef stock

Caramelize pear in a sauce pan until soft. Finely blend through food processor. Put back into the pan, add in demi-glace and cream. Stir, add beef stock if too thick. Seasoning if needed.

Tips: this sauce is sweetened naturally by pears.


So? would you try the Duckster and friends?



Tips: If I am you? I will never try this recipe except if I have list of people who love to eat duck, as I don?t have many friends who eat duck but then would replace with chicken? so don't try this at home? haha
