Easy Chik'N Mac & Cheese
I have to credit my sweet husband Tim for teaching me how to cook. He always knows exactly what to do, and exactly what something needs. He can make up recipes on the spot, and they always taste good! So this is one of his recipes! YUM! 1/2 C No-Chicken Broth 1/2 C Sour Cream (we use Tofutti/Non-Hydrogenated) 1 C Daiya Cheddar Shreds 1/4 tsp. Black Pepper 1/4 tsp. Cayenne 1 Slice of Whole Wheat Bread (for bread crumbs) 3 Boca Chik'N Nuggets 1 Tbsp. Vegan Margarine (we use Earth Balance) Dash or Garlic Powder Preheat your oven to 400 degrees. Defrost your Boca Chik'N Nuggets in the microwave for 1-2 minutes. Place your nuggets on a baking sheet and bake for 8 minutes, then turn them over and bake for another 8 minutes. Noodles & Cheese Sauce Bring a large pot of water to a boil. Once your water is boiling, add your uncooked pasta and cook to your desired tenderness. Once your noodles are finished cooking, strain and set aside. In a small-medium sized pot, heat your no-chicken broth over medium heat. Once your broth is warm, stir in your sour cream. Once your broth and sour cream are completely mixed together add your Daiya Cheddar Shreds and keep stirring until the cheese has melted completed. Add your black pepper and cayenne, and continue to stir on low heat. In a large pot on low heat add your noodles, vegan margarine and cheese sauce. Mix together completely. Bread Crumbs Using a fork, scrape your bread in all directions letting your bread crumble off in little pieces. Scrape off about 3 Tbsp. of bread crumbs. Heat a small sauce pan on low heat. Add your bread crumbs and a dash or garlic powder and continually stir until they are a golden brown, then remove from heat. You can then chop your bread crumbs smaller and more uniform if you choose. Finished Plate Once your Boca Chik'N Nuggets are done cooking, slice them diaganolly into thin slices. Add your Mac & Cheese to a bowl, place some Chik'N on top and then sprinkle with toasted bread crumbs. Makes 2 Servings Subscribe Bloglovin related searches : Easy
