Yesterday, the Hong Kong & Macau 2010 Michelin Guide  was launched. My favorite categories on this guide is the Bib Gourmand Category which highlights restaurants that altought didn´t make it to  obtain les macarons, are noteworthy, something like Michelin inspectors' favorites picks for good value. 

This two are on that list.

Regis and I are somehow  familiar with  Fofo's Executive Chef and Business Partner Willy Trullas Moreno´s cuisine, via El Willy, his succesfull restaurant in Shanghai, were we used to be regulars. Setting aside Willy's exuberant personality, la cocina de Willy is one filled and nurtured with technique and oficio (craftsmanship) from head to toe. He knows his thing.

Casa Lisboa´s Chef de Cuisine may not have such a festive and sparkling personality as Spaniard Willy, and possibly that is because, he, Martinho Moniz, being portuguese, is naturally discreet and reserved when with strangers. Altought quite young, Martinho has been trained on Portugal´s best kitchens and manages to softly and smoothly deliver you Portugal on a dish.

Ayer, la muy esperada Guía Michelin Hong Kong y Macau 2010 salió a la luz. Dentro de esta muy criticada pero seguida guía, una de las secciones que más me gusta (y más accesible $$) es la Bib Gourmand Category, la cual pone en los reflectores a aquellos restaurantes que aunque no sean (a su juicio) merecedores de les macarons (estrellas) forman parte de las recomendaciones de los duros inspectores Michelin.

Estos dos restaurantes aparecen por primera vez en la lista

Regis y yo estamos de alguna manera familiarizados con la cocina del Chef Ejecutivo y Business Partner de fofo: Guillermo Trullas Moreno, alias El Willy, quien tiene un restaurante homónimo en Shanghai, mismo del cual, eramos clientes habituales. Aparte de tener una personalidad exhuberante y arrolladora, Willy sabe cocinar y muy bien. Su cocina es una llena de platillos que delatan amor a la tierra, respeto a los ingredientes, conocimiento de causa, innovacion, técnica y oficio de pe a pa.

Por otro lado, el Chef de Cocina de Casa Lisboa  podrá no ser tan tan chispa como el  españolísimo Willy,  pero probablemente eso sea un simple "defecto de fabrica". Siendo de origen portugues, Martinho, como todos sus coterráneos es un hombre tranquilo, hasta tímido, que no gusta de hacer olas, ni atraer los reflectores hacia su persona: pero hacia sus platillos;  mismos que no tienen un gramo de timidez, su ejecución, está llena de respeto a las tradiciones culinarias de su pais, logrando hacer honor al mismo en cada platillo.
