Fall Desserts
Like so many bloggers right now, we have apples, lots of apples! Our CSA gave us a ton of organic apples this week. While they looked good, they also looked like they needed to be eaten immediately. I knew we'd never eat all the apples plain, so I decided to whip up John's favorite fall dessert (besides Maple Pecan Pumpkin Pie): Apple Crisp!
For such a traditional dessert, I turn only toward the best for a recipe: Joy of Cooking. And of course, I make my own alterations from there. I didn't add any sugar to the apple filling because they were already really sweet. My filling was all apple and nothing else. For the topping, I used all organic turbinado sugar (no white and brown), whole wheat flour, and 1/2 cup oats instead of 1/3 cup oats. I left out the nuts because I did not have any on hand. Yes, I used real butter. It's not the devil if used in moderation. Just watch the saturated fat. All assembled now. And all baked to perfection. This was one of the best apple crisps that I've ever made! The top was perfectly crisp and delicious while the apples were cooked perfectly, not runny, mushy, or still crunchy. John and I each had a huge bowl full. The only thing missing was some vanilla ice cream. I love fall and pretty much love all fall desserts. I love how so many of them focus on fruits, like apple crisp, pumpkin pie (ok, vegetable, not fruit), and baked pears. They are easily made fairly healthy and are always delicious.
