Fried chickpeas with chorizo and spinach
This delicious dish I have discovered at Mr. Bittman’s blog. Being a big chickpea fan the recipe was noted down but it took me a while to get to doing it. The sauce of fried chorizo and sherry goes very well with the crisp chickpea and the soft spinach. A delicious dish. Preparation time: 10 minutes plus soaking the chickpeas over night cooking time: 20 minutes difficulty: easy Ingredients: 100 gram of dried chickpeas 100 gram of chorizo 200 gram of fresh spinach 1/8 Sherry, dry 2-3 cloves of garlic some olive oil salt and pepper Preparation: Soak the chickpeas over night. Drain the next day. Boil the chickpeas for 10 minutes until they are soft. Meanwhile cut the chorizo into stripes or cube it. Put the sausage with the boiled and then dried chickpeas (use a paper towel) into the pan with some olive oil and fry. Do not turn the chickpeas much, so they get nice and crunchy. Keep frying on medium heat fro approximately 15 minutes. Use the time to wash the spinach. remove the chickpeas and the chorizo from the pan and add the spinach. Add the sherry and let it all cook. Turn the spinach occasionally. Season with salt and pepper. Let the liquid evaporate. Now add the garlic and let it cook for a moment. Add the chickpeas and the chorizo, mix all well and drizzle some olive oil over it. Mark Bittman now sprinkles some breadcrumbs over it and buts it under the broiler for 5 minutes, but I left this step out. Tastes perfectly without the bread crumbs. related searches : Fried
