Good Morning!

The day just flew by yesterday, by the time we got home at 4:30pm I had to start getting ready for my evening clients and then it was the finale of Bachelorette and you knew I could not miss that! What a silly show... and I am completely sucked into it! The producers really had to work hard this season keeping the audience tuned in with all the twist and turns. I have to admit that I was excited when my guy Reid came back and I thought he might have a chance after all but she chose Ed! Ah... so glad that I wasted all my time watching this show. The finale was not as fun because my husband was not home to make his comments... he is part of the fun of watching it.

Anyhow, after teaching Baby Boot Camp yesterday, I came home and got my workout in had a quick bite to eat, leftover Tortilla Soup + Grilled Asparagus. I have to make that again, so good! And then it was time to head downtown to drop Zoe off at her art class. It is a good 45 minutes from our house so it is not worth coming home so Emmet and I decided to brave being out in the hot heat and went to Mt. Bonnell.

Emmet at the top... he survived. We had some good bonding time together.


Well, there is not much to Mt. Bonnell. We made it up to the top and walked the trail, took a few pictures and called it a day. Way to hot to be out! I have got to toughen up if we are going to stay here, get used to these 100+ days. We then headed to Central Market and went window shopping until Zoe's class was done at 3:45.

For dinner I made one of my favorite pasta salads: Gazpacho Penne Pasta with Fresh Avocados. It does not look as pretty as I wish but it is so delicious. Cool and refreshing and very filling!

For this dish, I just made a batch of Barilla Plus pasta and measured out a single serving +, poured about 3/4 cup of the Gazpacho Soup that I made the other day, refrigerated it and then added fresh avocado right before ate it. Super!




So now on to today-- did NOT see a "happy" number on the scale this morning and need to work on this ASAP! I am going to squeeze in a quick run today and then it is off to downtown again so I am thinking that maybe Emmet and I can go to Zilker Park today and get some extra walking in. Hmm... not sure how he is going to feel about it but I am sure I can bribe him with a smoothie from the Daily Juice.

I made Blueberry Crisp Oats this morning. It has been a few days since my last bowl and was craving the comfort bowl.



Blueberry Crisp Oats

1/2 cup of rolled oats
1 cup of water

Cook over medium heat for 4-5 minutes.

Top with

1 tablespoon ground flaxseed
1 tablespoon wheat germ
1/2 cup of blueberries
1 tablespoon sliced almonds
drizzle of agave nectar

This bowl was delicious and made me smile. I also had a glass of lemon water before I ate and am going to drink lots of water today. I got my new issue of Clean Eating Magazine yesterday and found several things that I want to make. One of them being- No-Bake Chocolate Chip Cookies. Only 140 calories for 2 cookies and they are made with Caoca Nibs. I happen to have all the ingredients so we may make them when we get back and that will be my only indulgence.... (hopefully).

Time to get ready for the day and I will definitely get back to you later with the recipe.
