Ginger Tea

I have been struggling with morning evening sickness for the past few weeks. I miss eating dinner so much! Hopefully it will pass soon. Until then, I have been trying to fit ginger into my diet where I can. I have found that homemade ginger tea works well to calm my queasy stomach.

1-2 inches ginger root, sliced thinly (no need to peel)
4 c. water
Honey to taste
Fresh lemon or lime juice to taste

In a saucepan combine the ginger root and water. Bring to a boil. Reduce heat and simmer 10-20 minutes. Taste part way through. If it tastes too weak, simmer longer. If it is too strong, add more water. I opt for making it stronger because you can always add more water. Strain and sweeten with honey to taste. I like the freshness that a few drops of fresh lemon or lime juice adds too.
