Good Eats and Good News

Good morning everyone! Today is a very exciting morning…. but I will get into that in a little while. First, I will get into my eats from the last few days. On Monday night, I decided to make Chicken Tenders and Mashed Potatoes. I had 4 chicken tenders. These were really easy to make and are a good healthy alternative to fried chicken tenders. I took one chicken breast and cut it into smaller pieces. I then dipped each piece of chicken in whole wheat flour, then into egg substitute and then in bread crumbs mixed with italian seasoning and parmesan cheese. I baked them on a wire rack at 375 degrees for 20 minutes.

For the potatoes, I peeled 1 lb of potatoes and then cut each potato into 4, placed all of the cut potatoes in a pot with enough water to cover and boiled them for 20 minutes. After they were done boiling, I drained the water and added some garlic. I then mashed the potatoes with a masher and added 1/4 cup of skim milk and 1/4 cup of fat free sour cream. I wanted mine a little more whipped, so I took out the electric mixer to get the consistency I was looking for. Once they were complete, I added salt and pepper to taste.

I also jazzed up my chicken nuggets with 3 different sauces: BBQ, Ranch, and Honey Mustard.

And, I also had my usual side salad to complete the meal.

For dessert on Monday, I finished off my Pumpkin Ice Cream. Now, I know this is going to be a shocker, but during the day I also snacked on some pretzels and candy. I do not know what is with me, but I have been wanting candy… maybe its the Halloween candy all over the office that is making me want it :)

Yesterday for breakfast, I chopped up one apple and added cinnamon and sugar to it and heated it up for 45 seconds. I love warm cinnamon apples! I also had a mini bagel with cream cheese (sorry no pic).

Yesterday afternoon, I had a salad with spinach, trail mix, goat cheese and a raspberry dressing. I also had a vita top.

For dinner, my friend Emily and I got together for our 90210 Tuesday! It was her turn to make dinner, so we had homemade chicken noodle soup! That girl makes a mad pot of soup, let me tell you :) For dessert when I got home I had not one, but three of these mini pumpkin cookies, so good!

For breakfast, I had a simple bowl of Honey Bunches of Oats with Strawberries. It’s been a while since I had this kind, it was good but I knew it wouldn’t fill me up.

So, I am taking a packet of Pumpkin Spice Oatmeal with me to eat once I get to work. I am sure I will have the rest of the tootsie rolls sitting on my desk too!

For lunch, I packed up a turkey wrap, a pear, some carrots and some yogurt.

Now, that you have seen my eats from the last few days, here is the big news: My friend Emily is having a BABY! She thought she may have been expecting when I saw her yesterday, but to make sure she took a test this morning and called me right of way. Congrats girl!
