Grilled Watermelon, Fennel, and Chicken Sausages.

Today?s it, the deadline for Cooking to Combat Cancer III is tonight. The round up is going to be awesome! Many friends/foodies have helped me work toward completing the event?s third year, but there is always room for more.

Why today, April 29th? This is the day, 8 years ago in 2001 (at 9:13 AM to be exact), I was told my diagnoses. Luckily, I have been one of the lucky ones and have surpassed my 5 year marker of being ?cancer-free?. But, not everyone has been that lucky. So, this is my small way to help bring continued awareness.

Interestingly enough, one of my fellow APs who has battled breast cancer over the last year and a half has barely had time to celebrate her regimen?s success, broke her ankle this weekend. She has been told that her bones may not yet be at the strength they were before all the chemo and the fall on Stone Mountain proved too much for her ankle. She will need surgery and will be out for 2 weeks. Yikes! She job function just shifted with 19 days left. But, that?s okay because I want her to mend correctly. So, I will try to get the round up posted on Friday, May 1st, but I am not sure if I can make that happen. Friday would be cool, since I had my initial surgery on May 1st, 2001, but it will depend on how busy work gets.

On this deadline day, I bring you a delicious dinner I grilled last night. Grilled watermelon, fennel, and chicken sausages.
