Flatten the chicken breasts using a rolling pin, and place each one on a sheet of plastic wrap.
Place a slice of coppa ham on each breast, 2 slices of fresh mozzarella, and some pieces of sun-dried tomatoes.
Roll the breast using the plastic wrap. It should be tightly rolled, ensuring the chicken wraps around all the ingredients.
Seal the ends of the ballotine tightly; it should be as airtight as possible.
Cook the ballotines in boiling water for 15 minutes.
