![]() Happy New Year! I hope you all have some great resolutions for the new year. One of them should be to try this recipe for Rib Roast. I'm not really a beef person, and I loved this recipe. My only complaint is that we didn't make more! Here is what you do, and it sounds weird, but I promise this works like a charm. 1 - Buy a 5 lb. standing rib roast. Ours was 5.5 lbs. Let it sit out on the counter for about one hour. 2 - Rub some olive oil on it, and then rub some seasoning like Lowry's, or I used a seasoning called Johnny's. Don't be afraid to use a good amount. 3 - Put it on a rack in a roasting pan, and put it in the oven at 350 degrees for 1 hour. Then, turn the oven off. DO NOT OPEN THE OVEN DOOR AT ALL. Let it sit in the oven for 3, yes three!, hours. And did I mention - do not open the oven door. Tape it if you have to. 4 - After 3 hours, turn the oven on to 350 and cook for 35-40 minutes or until the beef is about 145 degrees. Before the last cooking time, I stuck a meat thermometer in and cooked until 145. It was perfect! It's important to let the roast sit out for about 15-20 minutes before carving to let the juices settle. Yum! Ok, now for the giveaway.
