Healthy Hash Browns For Breakfast
Monday was my husband’s (Michael) birthday! Our boys decided they wanted to make him something with potatoes for breakfast. So we boiled some organic russet potatoes from Trader Joe’s. We grated them and added chopped onions, chives, and a little salt and pepper. We put the potatoes into a large, heated skillet (used a little olive oil on the skillet). Bryce helped me whip an egg and pour it over the shredded potatoes. We use eggs from cage-free hens (from TJ’s). We topped the potatoes with eggs OM (Michael’s favorite way to eat hash browns) and drizzled a little olive oil on rosemary toast. He said it was delicious! They boys ate all of their hash browns so they must have been good What’s your favorite way to cook potatoes?
