I'm a Bad Blogger. Will Scones Make it Better?
Hi!!!! I'm sorry I've been away for so long. A few of you have been asking about me. I'm great! I forget that people actually read this sometimes. Well, a couple people anyway. I had promised some friends to put some recipes up while ago, and never did. Then, more recipes on top of those, and pretty soon, I had this stack of recipes that I needed to post and I got a little overwhelmed. So, I did nothing instead.
I really hate winter. It puts me into a funk. I don't want to do anything. Plus, my husband was gone for 5 weeks, so I was a single mom. Kudos to all single moms and dads out there. It's really hard. One of the worst parts it that when he's gone, I don't cook. Well, there is cooking, but it's nothing new and/or exciting. Part of it it that the kids don't always appreciate the things I make and the other part is that I don't want D. to miss out on any new recipes. Excuses, excuses....the dog ate my recipes too. I'll make a new start today with my rosemary cheddar-garlic scones. I love these things. They are buttery, cheesy, crumbly and herby. (that's herb-y, not Herbie, like the love bug) They remind me of Red Lobster's cheddar bay biscuits, but scones and with rosemary. I love the rosemary in these. I know everybody doesn't love rosemary, and I don't consider myself a rosemary lover, but when it works, it rocks. And in these scones, it works. Trust me. This is why people were asking me for the recipe! Rosemary Cheddar-Garlic Scones Ingredients: 1 stick cold butter cut into 1/2 inch pieces 2/3 c ground oatmeal (I just put the oatmeal into my mini chopper) 1 1/2 c flour 2 tsp baking powder 1/2 tsp salt 1 tbsp rosemary finely chopped 1 tsp garlic powder 1/2 c grated sharp cheddar cheese 2/3 c heavy cream 1 egg For the top of the scones: 2 tbsp heavy cream cracked black pepper Directions: 1. preheat oven to 350 degrees 2. line cookie sheet with parchment paper or a silpat 3. To the food processor, add ground oatmeal, flour, baking powder, salt, garlic powder, and rosemary. Pulse 4. add cold butter pieces and cheddar and pulse until mixture is in pea sized pieces 5. in a bowl, beat egg with heavy cream 6. fold cream mixture into flour mixture to combine 7. turn dough out onto lightly floured surface and pat into a disk about 1/2 inch thick 8. use a biscuit cutter to make rounds 9. place rounds onto prepared baking sheet, brush with cream and sprinkle with black pepper 10. bake for 30 minutes at 350 degrees Yay! I did it. I have such a sense of accomplishment. Now, to get the rest of my life back on track.... ; ) xoxo Melissa
