In Defense of Oatmeal
Yesterday afternoon I took a quick trip over to QuikTrip and as I was heading out of the parking lot, I spied an evil little sign out of the corner of my eye… Life’s Too Short for Oatmeal?! The nerve! You know I love me a good sticky bun – but for Heaven’s sake, why’d they have to go and pick on oatmeal? I adore oatmeal in all forms. Baked, on the stovetop, in cookies, in breakfast cookies, in yogurt and smoothies…the list goes on and on really!
What’s not to love though? Oatmeal helps lower cholesterol and reduce the risk of heart disease. Oatmeal is inexpensive and easy to cook. It’s an all-natural, one ingredient food and it’s friggin’ delicious. To prove my point, and stick it to QuikTrip, this morning I made one my best bowls of oatmeal yet…Pumpkin Butter & Banana Oatmeal! Ummm, yes. That’s: 1/2 cup each old fashioned oats, skim milk & water 1 banana (1/2 cooked in with oats, 1/2 sliced on top) Drizzle – drizzle – of pumpkin butter Chopped walnuts Can you say eye candy?! The sweet drizzle of spicy, aromatic pumpkin butter took this bowl of oatmeal from good to decadent. I literally had to force myself to slow down and take smaller bites, because I was gobbling it all up!! Chewy & thick oats, sweet & creamy banana, crunchy & earthy walnuts…and pumpkin butter. ‘Nuff said. Pick another breakfast item to make fun of QuikTrip – nothin’ to look at here! To round out my day of deliciousness, I packed some Chicken Tortilla Crock Pot Soup and a Honeycrisp Apple for lunch. Now THIS is a soup that gets better the next day, for sure! Doesn’t my apple look very serious against this black background? Ohhh winter lighting…you are the bane of my existence… Goodness, I could go crawl back into bed right now! I am so content, full and warm after that bowl of oatmeal. I’ll take it over a sticky bun any day of the week!! Off to the dermotologist…fun times.
