Inverted Stuffed Shells
How many of us have made stuffed shells? I know I have quite a few times. I've shared that recipe with many friends. The inverted stuffed shells is very similar to the stuffed shells, it's just everything all outside of the jumbo shell!!!!
Italian cooking is so easy. I think it has to do with the fact that I get to mix in so many different seasonings as well, which is a huge thing for me. I love flavor! We had our first snowfall this morning. I woke up, looked outside and though . Not what I expected on an early October day. The mind started roaming as to what I could make that would be enough to feed the family as well as my two nephews that are spending the night. Stuffed shells came to mind, but I didn't have the jumbo shells (pasta), so I decided to make the inverted version instead! Here's what you need: 1lb ground turkey 3 cups Mastaccioli 1 jar spaghetti sauce - substitute with fresh tomato sauce if you have it!! 1 8oz cream cheese (I used the low fat) 1/3 cup mozzarella cheese 1tsp ground ginger 1tsp parsley flakes 1tsp oregeno 1tsp salt/pepper or to taste 2 cloves fresh garlic Heat the oven to 400 degrees. In a large pot heat water to boiling for pasta. Cook ground turkey in a frying pan until meat cooked through. Once meat is cooked, add the cream cheese and break into pieces until melted into the meat mixture. Add all of the spices to the meat during this time. Once meat and cream cheese mixture is cooked through, add a 1/3 of the spaghetti sauce - fresh tomato sauce to the meat. Turn heat to low/simmer until the pasta is cooked to al dente'. When pasta is cooked add to a 9x13 baking dish (spray pan with cooking oil). Pour the meat mixture over the cooked pasta and mix together well. Once mixed pour over more spaghetti sauce - tomato sauce - in a row on top. You don't need to cover all of the pasta/meat mixture. This is just to coat the top. Sprinkle the cheese on top of the dish and sprinkle more parsley flakes. Bake in the oven for 10-15 minutes until cheese is melted or starting to lightly brown. This was a crowd pleaser at my house tonight. I served this with some dinner rolls and a side salad. Needless to say there is only enough leftovers for one person tomorrow. Hmmm....wonder who will get that!! This takes no time at all....again, a huge hit for sure. Enjoy! Patricia
