Lamb Pita Burgers
You really can't beat a good burger can you? I know I love them! However, I don't like to make a habit of eating them too often, what with fat content and all that, blah blah.... So I decided to create a nice healthy version, which you can enjoy anytime you like without an attack of the guilts afterwards!
1/4 spanish (red) onion, finely diced 1 clove garlic, crushed 1 egg 2 tbsp breadcrumbs 150g low fat natural yoghurt 2 tbsp chopped coriander Juice of 1/2 lemon 2 small wholemeal pita pockets, halved Mixed lettuce to serveIn a mixing bowl combine the mince, onion, garlic, egg, breadcrumbs and 1 tablespoon of the coriander, season with salt and pepper then use your hands to thoroughly combine the ingredients. Next take roughly golfball sized lumps of mince and shape them into little patties. You should end up with 8 in total. Heat some olive oil in a frypan over medium heat, and cook the patties for about 3 minutes on each side. Next make a yoghurt dressing by combining the yoghurt, lemon juice and remaining coriander. Season with salt and pepper and mix well. To serve, fill the pita bread pockets with mixed lettuce leaves (and whatever else you fancy - i used cucumber and carrot), two of the patties and top with yoghurt. See what I mean? Delicious and good for you! It's a win win situation :-) Serves 2.
